A perfect cosy autumn treat: Baked brie with honey

This baked brie and honey recipe is so SO simple, takes no time at all and is the perfect accompaniment to a cosy autumn evening in.

We LOVE cheese in our household and when my husband came home with Brie as big as my head it was a very exciting evening indeed.

It had been a drizzly autumn day and couldn’t have been a more perfect excuse to haul up on the sofa for a cheese and wine night. But this time I fancied doing something a little different. So, I baked the brie!

Usually camembert is best served up warm and fresh from the oven but my goodness, baking a brie has quite literally changed my approach to this delightful French cheese.

Some of you might read this and be like, duhhh we always bake our brie! But, the idea was new to me and going forth, my brie shall always be baked.

Here is my baked brie with honey recipe

This is how I added a bit of a twist and some extra flavour…

  • Pre-heat the oven and lay the brie onto greaseproof paper before placing it onto a baking tray.

  • Score the brie so it reveals the creamy texture (but don’t cut all the way through!)

  • Drizzle in olive oil and add a generous sprinkling of salt and pepper

  • Break off fresh rosemary and place into the square lines

  • Drizzle honey all over and then bake for 20 minutes

It’s SO simple and best served with toasted, buttery sourdough and crackers. Oh, and a really good red wine!
